Stir in 12 cup of the enchilada sauce. Stir in Spanish rice and 1-14 cups enchilada sauce. This is also great with leftover.
Spray a 9x13-inch casserole dish with cooking spray.
Arrange 4 tortillas in dish overlapping slightly. Serve with a green salad or beans and rice. Simple and quick beef enchiladas. Ground beef and onion are wrapped in flour tortillas topped with Cheddar cheese and black olives then baked.
