Corn Enchiladas Beef. I like to use a higher fat. Brown ground beef and drain.
Layer 6 corn tortillas to cover bottom. This is also great with leftover chicken shredded beef or turkey. Ground Beef Enchiladas are pretty simple to make but do require a few extra steps.
To fill the enchiladas spoon about 23 cup of the beef mixture down the center of each tortilla.
Add green chiles salt and pepper. Salsa Verde pepper Jack cheese and creamy sweet corn soup come together to give this dish fabulous flavor. To assemble the enchiladas lay tortilla on a flat surface and spoon 14 cup of the beef mixture in the center. Stir in the corn and salsa and cook until all liquid has evaporated for about 15 minutes.
